2 jars (about 6 cups) tomato sauce
3/4lb lasagna noodles
1lb ricotta cheese
6 oz fresh baby spinach
1lb grated mozzarella cheese
1/2cup grated Parmesan cheese

optional:
stir in garlic or minced basil with ricotta
add up to 2 cups chopped, cooked veggies (mushrooms, zucchini, ect)

Preheat oven to 375. Spoon generous cup of tomato sauce onto bottom of 9"x13" baking pan. Spread. Cover with single layer of raw lasagna noodles,edges touching. Drop spoonfuls of ricotta over noodles using half the ricotta. Spoon and lightly spread another cup of tomato sauce over the ricotta. Layer on 1/2 of the spinach leaves pressing them into the sauce. Sprinkle the spinach with half of the mozzarella. Place a single layer of noodles on the mozzarella. Drop spoonfuls of the remaining ricotta on top (using all the ricotta). Spoon half of remaining sauce and spread. Layer the rest of the spinach, pressing it down. Sprinkle the remaining mozzarella over the spinach. Make a final layer of noodles on top of the spinach. Spoon remaining sauce on top of the noodles. Cover tightly with aluminum foil and cook for 1 hour. Remove (but save) the foil. Sprinkle top of lasagna with Parmesan. Return to the oven and bake uncovered for 15-20 min (until top is golden)
Remove lasagna from the oven. Cover with foil and rest 15 min before cutting and serving.
