2 CUPS SIMPLE SYRUP
1/2 TSP. SALT
2 CUP FRESH LEMON JUICE
2 CUP WATER

Remove wide strips of zest from2 lemons with a vegetable peeler (do not remove the pith). Make 2 cups simple syrup (see below), adding the lemon zest before heating.

Let cool, then pour into an ice-filled pitcher. Stir in 1/2 teaspoon salt, 2 cups fresh lemon juice and 2 cup water, and some lemon slices.

SIMPLE SYRUP: To make simple syrup, bring 1 1/2 cups each sugar and water t a boil, stirring until dissolved. Let cool.

BLACKBERRY LEMONADE - Muddle 2 cups blackberries with 2 cups simple syrup in a pitcher. Stir in 2 cups each fresh lemon juice and water; add ice and lemon slices.

MINT LIMEADE: Muddle 2 lime wedges and some mint leaves in each glass and add ice. Mix 2 cups simple syrup, 2 cups water, 1 1/2 cups fresh lime juice and 1/2 cup fresh lemon juice in a pitcher; pour into the glasses.

SPIKE IT: Add a shot of vodka or coconut rum.
