¼ cup finely chopped onion
2 tbsp. olive oil
3 cups soft bread crumbs
½ cup hot milk
2 tbsp. chopped parsley
3/4 tsp. salt
dash pepper
¼ tsp. savoury
2 lbs. white fish fillets
juice of 1 lemon
2 tomatoes sliced
1 cup of Alfredo or Cheese Sauce

Directions:

Heat oven to 375º. Grease large muffin pan(12). Saute onion in oil until tender. Stir in crumbs, milk, parsley and spices. Reduce heat. Shape pieces of fish fillets around sides and bottom of muffin pan. Fill centre with bread stuffing. Brush top with lemon juice. Bake 10 minutes, then add 1 - 2 tbsp. of cheese sauce and top with a tomato slice on each one. Return to the oven and bake another 10-15 minutes.
