1 boneless beef chuck roast (4 pounds), trimmed
1 envelope brown gravy mix
1 envelope Italian salad dressing mix
1/2 cup water
1 medium sweet red pepper, chopped
1 cup chopped green pepper
2/3 cup chopped onion
8 medium red potatoes, quartered
1 cup small carrots, peeled

Directions:
Directions:
1) Cut roast in half and place in slow cooker. In a small bowl combine the gravy, dressing mix, and water. Pour over the roast.

2) Top with peppers and onion. Cover and cook on low for 7-8 hours or until meat is tender.

3) Add in the potatoes and carrots for the last 2 hours of cooking.

You can also bake this in the oven and it is just as good. Bake at 350º for 2 hours and put the potatoes and carrots in the last hour of cooking
