4 C Basmati Rice
1 C Mung Beans

Directions:
Cook mung beans for 4 minutes in enough water to cover beans. Add rice and make sure the water is about 2 inches above the rice. Boil 2-3 minutes. Turn off fire.
Strain rice and mung beans then rinse in cold water. Let cool.
Meanwhile, peel and cut potatoes in thin rounds or lengthwise.
Add 1/3 cup oil to large pot. Heat oil. Remove pot from heat and lay potatoes on bottom (you can use onions too). Add a touch of tumeric in spaces between the potato slices. (If you don't have tumeric use 1/2 tsp curry).
Add cool rice mixture on top of potatoes in a mountain shape. Add 1/3 cup water, cover and cook on low to medium heat for 15 minutes. Turn to low for 20 minutes and then turn to VERY low for another 20 minutes.
Cool bottom of pot by rinsing in cold water -(potatoes will release quicker and easier).
Turn out onto a large platter. Carefully scoop out potatoes and place on top of rice. They should be crispy. Serve. To reheat add 1/4 cup water and heat.

Variations to recipe: Raisins and cinamon.
Saute onion and chopped carrots or raisins (just a minute to bloat the raisins). Add in a layer in middle of the rice. Cook as above
