1/2 cup fresh bread crumbs
1/4 cup plus 2Tablespoons chopped dried apricots
3 Tablespoons finely chopped red onion
3 Tablespoons finely chopped fresh basil
2 Tablespoons grated Parmesan cheese
1 pound well trimmed pork tenderloin
1/2 cup apricot nectar
1/2 cup chicken broth
1 Tablespoon lemon juice
1 teaspoon Worcestershire sauce
2 teaspoons corn starch blended with 1 tablespoon water
1/4 teaspoon salt

Preheat oven to 350º. Spray a small baking dish with nonstick spray.

in small bowl, combine bread crumbs,1/4 cup apricots,onion, basil and Parmesan

Halve the tenderloin lengthwise. Working with one half at a time, place between 2 sheets of plastic wrap. with flat side of meat pounder, pound pork to 1/4" thick. Half each piece cross wise for a total of 4 pieces

Spread the apricot mixture over the pork and press to flatten. Rollup each piece of pork from shortend. Place pork rolls , seam side down in the baking dish and bake for 35-40 minutes or until the meat is cooked through but still juicy.

Meanwhile, in small sauce pan, combine the remain apricots, apricot nectar,broth, lemon juice Worcestershire sauce, cornstarch mixture and salt. Bring to a simmer, stirring and cook for 1 minute or until lightly thickened. Cut the pork rolls into 4 to 6 slices each and server with apricot sauce.
