1 lb. ground lean pork
2 lb. ground lean beef
2 med. onions, chopped
1 Tbs. salt
2 tsp. garlic powder
6 Tbs. chili powder
1/2 c. water
1/2 c. yellow cornmeal
2 small cans tomato sauce
1 small can mild Rotel tomatoes
Red pepper to taste - Optional
Covering:
2 1/2 c. cornmeal with 1 tsp. salt
pkg. or two of corn shucks

Directions:
Directions:
Combine meats, 1 T. Rotel juice,1 can tomato sauce, 4 Tbs. chili powder, garlic powder, water, 1/2 c. cornmeal & chopped onions in a bowl and set aside. Begin steaming corn shucks in a double boiler so that they are well wilted.

Place the cornmeal/salt mixture on a cookie sheet. Pinch off a thumb-sized hunk of the meat mixture, shaping it into a tamale by rolling it over and over in the meal mix on the cookie sheet. Place each tamale on a shuck. Roll by folding each end toward the center first and then rolling the remainder around each tamale. Place in a large roaster with the seam of the tamales facing down on a rack. Steam with the following mixture:
1 can Rotel (minus 1 Tbs.), 1 can tomato sauce, 2 Tbs. chili powder, 1 Tbs. salt. Add enough water to fill roaster almost halfway up the sides. Place lid on roaster and steam over medium heat for 1 1/2 to 2 hours. Makes 7-8 dozen tamales.
