4 C. okra cut into 1/2 in. rounds
1 can Mexican style corn & peppers
1/2 c. chopped onion
1 chopped green onion
1 tsp. minced garlic
1/4 c. diced red bell pepper
3Tbs. light olive oil
Salt & Pepper to taste

Directions:
Directions:
Saute onion and bell pepper in oil, in a heavy 5qt. saucepot. When onion is clear, add remaining ingredients stirring well. Cover pot and let simmer until okra is barely tender. Do not stir again as the okra will "go to pieces". Serve gently while hot! Delicious with nearly any meat dish & French bread.
