Several racks baby back and/or pork spare ribs
Kosher salt
Freshly ground pepper

FOR THE SAUCE

4 tablespoons mashed and minced garlic
2 tablespoons extra-virgin olive oil (perhaps slightly more)
1 cup apple cider vinegar
1/2 cup soy sauce
2 cups ketchup
2 cups honey
Kosher salt
1-2 demitasse cups espresso (or about 1/4-1/2 cup of strong coffee or instant espresso)
Fresh ground black pepper

To cook the ribs:

Preheat oven to 250 F. Remove membrane from back and season generously with Kosher salt and freshly ground pepper. Stack racks of ribs on top of each other on a foil-lined baking sheet. Bake for as long as it takes ribs to be very soft and nearly falling off the bone. Re-stack the racks of ribs so top goes to bottom, etc. once every 45 minutes or so.

When the ribs are done, remove from oven and take to pre-heated grill. Slather with the espresso BBQ sauce and grill over indirect heat for 10 minutes per side, or until the sauce begins to carmelize.

Slice into individual ribs and serve with remaining sauce.

To make the sauce:

Mash garlic with the side of a knife and then mince finely to release oil. Add olive oil to a preheated saute pan. Add the garlic and saute until it gets light brown, about 1 minute. Add cider vinegar,
soy sauce, ketchup, and honey and stir well. Add a pinch of Kosher salt, then whisk in the coffee. Add freshly ground black pepper, to taste. Bring to a simmer and simmer for 10 minutes.
