2 Tbsp. olive oil
12 cloves garlic, thinly sliced
1 medium onion, chopped
1 Tbsp. chopped fresh thyme
1 19 oz. can cannelloni beans, rinsed and drained
1 14 oz can artichoke hearts, rinsed well and drained
1 Tbsp. lemon juice
1/8 tsp. cayenne pepper

Directions:

Heat olive oil in a large skillet over med. heat. Add thinly sliced garlic; cook for 5 minutes or until garlic is tender and golden (watch your heat and turn down if browning too quickly). Stir in onion and thyme and saute for 5 minutes more (until onion is tender).
In a food processor combine cooked onion, cannellini beans, artichoke hearts, lemon juice and cayenne. Cover & process until smooth. Chill covered 4 - 24 hours before serving.
Serve with veggies or healthy type chips..baked pitas, etc.
