1 Med Onion
1 stick butter
1 16 oz. package frozen spinach, thawed and drained
1-2 cans artichoke hearts, chopped NOT marinated
1 8 oz. packaged cream cheese, softened
1 8 oz. package Monterey jack cheese, grated
1 c. grated Parmesan cheese
1 c. sour cream

Directions:
Directions:
Saute onion in butter until softened. Mix other ingredients together and stir into onion mixture. Put dip mixture into crock pot and heat on med high until cheeses are melted and ing's are all blended together. Stir frequently. Turn crock pot down to low setting and server warm dip with tortilla chips or favorite bread.

When I make this, I sauté the onion and then mix everything in a microwaveable bowl and microwave until all the cheeses are melted and mixed together. Then I put it into the crock pot on LOW and serve as usual.
It is even better if you make it the day before and then re warm and serve- it really gives the flavors a chance to meld together.
