2 lbs yams
1/2 tsp salt and pepper
2 Tbsp brown sugar
2 Tbsp burbon or brandy optional alcohol is cooked away during baking leaving only flavor
1 egg yolk
2 Tbsp butter or margarine

for Praline topping
2 Tbsp butter or margarine melted
3 Tbsp brown sugar
1/3-1/2 cup chopped pecans
1/4 tsp ground nutmeg

1. Peal yams cube into approximate 2 inch pieces and cook in boiling water until soft 15-20 mins. drain and cool.
2, Mash or process yams until smooth. Add salt, pepper, brown sugar, burbon, egg yolk and butter.
3. Grease or use Pam in an 8 inch square baking dish. Spoon mixture into dish.
4. Melt butter for topping combine with brown sugar nutmeg and pecans. Spread over yams.
5. Bake at 355 for 35-40 min.
