Crust:
¾ cups crushed graham crackers
¾ cup crushed walnuts
3 tablespoons melted unsalted butter
Cake:
4 – 8oz blocks of cream cheese, softened or room temperature
1 ¼ cups of sugar
4 eggs
2 teaspoon vanilla
1 tablespoon fresh lemon juice
Topping:
1-16oz sour cream
¼ cup sugar
1 teaspoon vanilla

Pan: 10 inch spring form pan
Line pan in foil. Rub a little unsalted butter on the bottom.
Preheat oven to 350.

Crust:
Mix graham crackers, walnuts and melted butter together. Press into bottom of the pan.

Cake:
Beat cream cheese until smooth.
Add sugar and mix
Add eggs one at a time, mix.
Add lemon juice and mix
Add vanilla and mix.
Pour into pan. Bake 45 to 55 minutes, until middle doesn’t jiggle.

Topping:
Mix sour cream, sugar and vanilla together.
Place in refrigerator.

After you take cake out of oven, sit on a cooling rack for 15 minutes. Spoon topping on cake and place back in oven for 5 minutes. Take cake out of oven, put on cooling rack and let cool completely. Place in refrigerator with a piece of foil lying across the top. Should leave in refrigerator for 2-3 days
After 1 day, flip the foil over.
