½ tsp. nutmeg
½ tsp. cinnamon
1 tsp. allspice
½ tsp. salt
½ tsp. pepper

Riz (Rice)
½ lb ground beef
1 tsp. allspice
½ tsp. pepper
½ tsp. salt
¼ tsp. nutmeg
1/8 cup soy sauce
1 tsp. gravy master
2 cups rice
2 cups chicken broth (you may
substitute water for the broth)
2 cups water
½ cup roasted almonds and pine nuts (optional)

Wash chicken well. To prepare the chicken, make a rub with the nutmeg, cinnamon, allspice, salt and pepper. Coat the inside and outside of the chicken with rub. Place chicken in roasting pan and add 1-cup water. Cook chicken in 350° oven for approximately 2 hours, or until chicken is cooked fully. The temperature of the chicken should be 180°. Debone the chicken and cut the meat in smaller pieces.

Strain the juice from the roasting pan and set aside.

Brown the ground beef. Add the allspice, pepper, salt and nutmeg. Add the rice. Add the broth from the chicken. Add soy sauce and gravy master. If the liquid is not enough to cover the rice and ground beef, add enough water to drown the rice. Bring to a boil. Reduce heat and cook for another 10 to 15 minutes.

Place the rice in a serving platter. Layer the chicken on top of the rice and add the roasted nuts.

This is one of those dishes that is often made on a Sunday afternoon. The chicken makes the house smell great. The rice looks beautiful when placed in a platter and covered with pieces of chicken and nuts. This is a filling meal. My mother made this dish whenever she invited anyone for dinner, because it makes a wonderful presentation and goes well with many other dishes. Make a lemony salad as a side dish.
