1lb bag lentils
1 onion (chopped)
3 tbsp. vegetable oil
½ cup rice
2 tsp. salt
6 to 7 cups water

Directions:
Directions:
Sauté onion in oil. Remove onion.

Pour lentils in the same pot and add water. Cook lentils until they are tender (about ½ hour). Add the rice. Cook for an additional 10 minutes. Add salt and the sautéed onion. Reduce heat and let cook for approximately 10 minutes. You may need to add additional water to prevent the mixture from getting hard and sticky. It should be somewhat soupy.

Remove from heat. Scoop lentils into bowls or plates. Serve warm or cold.

Mjadara is a wonderful vegetarian dish and goes very well with cabbage salad and khibiz (pita bread).
