1 lb. bag lentils
2 onions (sliced)
2 tbsp. vegetable oil
½ cup rice
1 tsp. salt
3 cups water
¼ cup olive oil

Directions:
Directions:
Sauté onion in oil until golden brown. Remove onion from pot and set aside.

Add the lentils to the same pot. Add water. Cook lentils until they are tender (about 15 minutes). Add rice and cook until some of the water dissolves. Add salt and olive oil. Reduce heat and let cook for approximately 15 minutes.

When the lentils and rice are cooked, remove from heat. Put lentil mixture on individual plates and arrange fried onion on top of the lentils.

This can be served warm or cold.
