Squash
10 4” pieces of squash
½ tsp. salt
4 cloves crushed garlic
¼ cup dried mint
1 tbsp. shortening
1 can tomato sauce
2 cups water
½ cup lemon juice

Stuffing
1 cup washed rice
½ lb. ground beef
1 tsp. allspice
½ tsp. cinnamon
½ tsp. salt
½ tsp. pepper

Remove the head of each piece of squash. Wash the squash and dip the cut end in salt. Let stand for ½ hour. Then, hollow out each piece of squash. You will need a special utensil to hollow out the center without piercing the other end of the squash. Set aside the filling for another dish.

Combine the rice, allspice, cinnamon, salt and pepper. Add the ground beef to the rice mixture.

Stuff each squash with the rice and meat mixture.

In pot, sauté garlic and mint in shortening. Cook for approximately 3 minutes. Layer the squash on top of the garlic and mint. Cover the squash with a somewhat heavy plate to keep everything in place. Otherwise, the squash will separate and each piece will break.

Add the tomato paste to 2 cups water and stir. Add paste mixture to the squash. Cook on medium heat. When liquid comes to a boil, reduce heat and add lemon juice. Cook for another 10 minutes.

The filling can be sautéed with eggs for a tasty vegetarian meal. Add one raw egg, ¼ tsp. salt and ¼ tsp. pepper. Cook in a frying pan on medium heat until the egg is cooked fully. This tastes delicious with khibiz (pita bread).
