2 cups bulgar wheat
1 medium onion (grated)
1 ½ lbs. ground beef
1 ½ tsp. allspice
1 ½ tsp. salt
½ tsp. pepper
¼ cup water

Filling
1 medium size onion (chopped)
1 tbsp. vegetable oil
½ lb. ground beef
1 tsp. allspice
1/2 tsp. pepper
1/8 tsp. cinnamon
1/8 tsp. nutmeg

Directions:

Add just enough water to the bulgur wheat to cover.

Mix the onion, salt, allspice and pepper together and let sit for 10 minutes. Add the onion mixture to the bulgur wheat. By this time, the bulgur wheat should be fluffy from absorbing all the water.

Add the ground beef to the onion and bulgur wheat mixture. Mix well until the mix forms a good consistency. You may want to taste now to make sure you have enough salt and pepper.

Cook onion in oil. Add ground beef and spices. Cook for approximately 10 minutes.

Grease 13” round baking dish with shortening. Divide the meat and wheat mixture in half. Spread ½ in baking dish. Fill the entire dish. Add the filling to the top of the dish and spread evenly to fill the pan. Layer the remaining meat on top of the filling. Smooth the meat by wetting your hand and running it across the top. Form a hole in the center of the meat pie. Using a knife, make diagonal designs along the top of the pie.

Poor olive oil over the top and add a few teaspoons of shortening. Bake in 350° oven for about 40 to 50 minutes, or until browned.

This is one of the best and most popular Lebanese dishes. Kibbee is often eaten with hummus or yogurt and a salad. My mother always made a tray of kibbee, a bowl of riz a djeej (rice and chicken) and hummus. She always had a tray of kibbee in the freezer, ready to cook, for those unexpected guests. This can be made in advance and put in the freezer for at least one month.
