3 lbs chicken wings (17 or 18)
1/3 cup soy sauce
2 tablespoons vegetable oil
2 tablespoons chili sauce
1/4 cup honey
1 tsp salt
1/2 tsp ground ginger
1/4 tsp garlic powder
1/4 tsp cayenne red pepper (optional)

For easier handling as a finger food, separate chicken wings at joints. Mix remaining ingredients; pour on chicken to marinate. Cover and refrigerate, turning chicken occasionally, at least one hour. (I usually try to do for at least four hours.)

Heat oven to 375 degrees. Drain chicken, reserving marinade. Place chicken on rack in foil-lined broiler pan. (NOTE: You can also use racks in cookie sheet pans - must have place for liquids to go. Be sure to put the foil or clean-up will be horrible. Daddy usually lines the foil on the bottom part of the broiler pan that catches the juices and he also lines the top part and takes a toothpick and puts holes in it for the juices to drip through.)

Bake 30 minutes. Brush chicken with reserved marinade. Turn chicken and bake, brushing occasionally with marinade until tender, about 30 minutes. (17 or 18 appetizers).

Do-ahead Tip: After baking, chicken can be covered and refrigerated no longer than 24 hours. To heat, bake uncovered in 375 degree oven until hot, about 7 minutes.
