18.25 oz Cake Mix
1/4 c oil
3 eggs
8 oz sour cream
8 oz coconut cream.

Whip all ingredients until well blended. Put in 2-9" greased pans. Bake 350 degrees until toothpick inserted in center comes out clean. Ice with buttercream icing using coconut extract in place of vanilla. See buttercream icing recipe provided by me. If you can get it, Bavarian cream filling in the middle of this is excellent.

This is a great cake for Easter! Sprinkling the top with coconut just after the cake is iced is ideal. Of course jelly beans will delight the kids. Pay attention to #4 in the directions to make your coconut flavored icing! From our 'More Than Cookies' Bakery
