1 1/2 cups unseasoned mashed potatoes
1/3 cup melted butter
2 cups sugar
3 eggs
1 cup buttermilk
1 teaspoon vanilla
5 1/2 cups sifted flour
4 teaspoons baking power
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon nutmeg
Sugar to roll in

Directions:
Directions:
Combine potatoes, butter, 2 cups of sugar, eggs, buttermilk and vanilla. Beat until blended. Add flour, baking power, soda, salt and nutmeg. Blend. Chill 1 hour if you have time. Roll out doughnuts and cook in hot oil (360º). Roll in sugar.
