Debone 6 skinless chicken breasts, cooked in salted water until tender.
Defrost box of whole broccoli stalks.
2 c cream of chicken soup.
1 c mayo
2 t fresh lemon juice
1 t curry powder ( adjust this to taste )
1 1/2 c sharp cheddar cheese, grated
seasoned Italian bread crumbs

Line bottom of oblong casserole dish with broccoli that has been blotted dry with paper towel. Place chicken breast on top of broccoli. Mix soup, mayo, lemon juice, and curry powder together. Add grated cheese and stir well. Pour sauce over chicken and broccoli. Sprinkle seasoned Italian bread crumbs over top. Bake uncovered at 350º for 30-45 minutes.

This recipe reminds me of Mr. Roy and the dinner parties Mama used to give. After Daddy passed away, Mama started dating Mr. Roy. He was the sweetest man and treated my Mama like a queen. They had so much fun taking dancing lessons and going to parties. Mama converted the storage room off the carport into a mirrored dance studio so she and Mr. Roy could practice their dancing. One of my favorite pictures is Mama dressed in a beautiful cocktail dress and Mr. Roy in a tux. That was such a happy time in Mama's life. Unfortunately Mr. Roy passed away with Alzheimers way before his time.
