2 1/2 c herbed croutons
2 lbs bulk pork sausage
4 eggs, beaten
2 1/2 c milk
1 can cream of mushroom soup, undiluted
1 small can (4oz) sliced mushrooms, drained
3/4 t dry mustard
2 c shredded medium sharp cheese

Directions:

Spread croutons in a lightly greased 13X9 baking dish and set aside. Cook sausage until browned, stirring to crumble. Drain well on paper towels. Sprinkle sausage over croutons. Combine eggs, milk, soup, mushrooms, and mustard. Mix well. Sprinkle 1/2 cheese over sausage, then pour liquid mixture over that. Cover and refrigerate overnight. Remove from refrigerator; let stand 30 minutes. Bake uncovered at 325º for 50-60 minutes. Sprinkle remaining cheese over top and bake an additional 5 minutes or until cheese melts.
