Ask Mama how to fix squirrel and she would say,"that depends". If they are young, fry them. If they are old, smother them in gravy. Now, how do you know how old a squirrel is? I could be cute and say ask them their age before you kill them...but, my brother Sonny would say by their size.
FRIED SQUIRREL
Cook them just like chicken, but not as long.

SMOTHERED SQUIRREL
2 squirrels, cut up
2 T of flour, or more if needed
1/4 lb slab of bacon, diced
1 medium onion, chopped

Salt and pepper squirrels and sprinkle with flour. Set aside. Brown diced bacon in heavy skillet. Remove bacon. Add squirrels to bacon drippings and brown. Remove squirrels, add onions and cook until transparent. Return squirrel to skillet and add a small amount of water (about 1/2 c). Cover and simmer until tender, about 1 hour. Add bacon bits and additional water, if needed, and cook a few minutes more while stirring. Serve with hot white rice and a pan of homemade buttered biscuits.

Mama fixed the best squirrels, fried and smothered. Believe it or not, Gail, Sonny and I used to fuss over who was going to get to eat the brain from the fried squirrels. Makes me sick to think of that now!!!
