Place skinned and deboned chicken breasts (adjust number of breasts to number of people you are feeding) in cool, salted water. Bring to boil and let simmer. When tender, let cool. Cut chicken into small bite size pieces. Add celery that is chopped into small even pieces. Add mayo and season with salt and pepper.

This recipe sounds so easy, but mine never tastes as good as Mama's. She made it a day ahead and did not overload it with mayo.
