1 8 oz. package manicotti, uncooked,
1 lb. lean ground beef,
1/2 c. chopped yellow onion,
2 pressed cloves garlic,
1 26 oz. jar red pasta sauce,
2 tsp. oregano leaves,
12 oz. package shredded mozzarella cheese,
15 or 16 oz. container of ricotta cheese,
10 oz. package frozen chopped spinach (thawed and well drained),
2 eggs,
1/2 c. grated parmesan cheese

Directions:
Directions:
Cook pasta according to package directions. Preheat oven to 350º. Brown meat, add onion and garlic, cook and stir until tender. Stir in pasta sauce and oregano. Simmer 15 - 20 minutes. In a bowl, combine 2 cups mozzerella, ricotta and parmesan cheese, spinach and eggs; mix well. Stuff into pasta. Arrange on 9 x 13" greased baking dish. Spoon sauce over pasta. Cover and bake for 30 minutes. Top with remaining cup of mozzarella cheese and bake 15 minutes longer.
