2 lb. crab meat
1 small onion, finely minced
2 T. flour
2 eggs, lightly beaten
1 T. lemon juice
1/2 c. unsalted butter, divided

Directions:
Directions:
In a mixing bowl, combine the crab meat, onion, flour, eggs and lemon juice. Form the mixture into eight 3 1/2" by 1" thick crab cakes.
In a skillet, melt 1/4 c. butter over medium heat. Cook 4 cakes at a time, 4 minutes per side. They should be nicely browned on both sides and heated through.
Keep the four cooked cakes warm in the oven while cooking the remaining four. Use additional butter for the second batch.
