1 tablespoon dry yeast
1/4 cup warm water
2 tablespoons sugar
2 tablespoons soft butter
1 cup evaporated milk
1 cup hot water
5 to 6 cups flour, divided
1 egg, divided
2 teaspoons salt
1/2 to 3/4 cup melted butter

Directions:
Dissolve yeast in warm water with sugar. Add the soft butter, egg yolk and evaporated milk mixed with hot water. (This saves scalding and cooling fresh milk.) Add about 2 1/2 cups of flour and beat with dough hook. Beat egg white until stiff and add gently to the batter. Add another 2 cups of flour and the salt. Continue beating adding flour, if needed. You want the dough to be quite wet but not like a sponge. (A lot depends on the weather and your flour.) Knead with dough hook thoroughly. Cover and let rise until double. My mixer is large enough that I can leave the dough in it and cover with cling plastic. Turn out on a well floured board and roll to about 1/4 to 1/3 inch thickness. Have an ungreased sheet pan beside you and the melted butter in a bowl. Cut with about a 3 or 4 inch cutter (baking powder can), quickly dipping 1/2 of round into butter placing on sheet pan, folding the undipped side over. Place just touching each other. This should make about . Cover lightly and let rise until double. For the big ones bake about 15 to 18 minutes in preheated 375º until browned and center rolls sound hollow when tapped. Peggy has carried the memory of Margaret Glenn's cloud-like rolls she served us many years ago when I was in New Mexico. Peggy's are colored by the egg yolk. Skip this and you will have snow white melt-in-your-mouth rolls. Thank you Margaret! And thank you Peggy for all of us in Arizona!!!

These are the number one rolls that I make. They are so easy Peggy said you can make these in 90 Minutes, I could never make them that fast!!! In Peggy's own words "they are simply marvelous!!!"
