1 1/4 cups cornmeal
1 cup all purpose flour
1/3 cup packed brown sugar
1/3 cup granulated sugar
1 tsp. baking soda
1/2 tsp. salt

1 egg
1 cup buttermilk
3/4 cup vegetable oil

Directions:
Directions:
1) Combine and sift together cornmeal, flour, sugars, baking soda and salt.

2) Beat together egg, buttermilk, and oil with a fork. Stir liquid mixture into dry ingredients just until moistened.

3) Fill greased muffin pan 3/4 full. Bake at 400º for 12-15 minutes. Test if done using a toothpick in the middle of muffin. If comes out clean, they are done. Cool in pan for 10 minutes before removing.
