1 1/2 tsp. salt
1 1/2 tsp. pepper
2 tbsp. chili powder
1 tsp. crushed bay leaves
2 tbsp. Liquid Smoke
4 lbs. beef brisket

Barbecue Sauce
3 tbsp. brown sugar
1/2 cup water
4 tbsp. Worcestershire sauce
2 tsp. celery seed
1 14oz. bottle ketchup
2 tbsp. liquid smoke
6 tbsp. butter
3 tsp. dry mustard

Directions:
Directions:
Combine salt, pepper, chili powder, and bay leaves. Rub meat completely with Liquid Smoke. Place meat fat side up in a large roasting pan. Sprinkle dry seasoning mixture on top. Cover tightly. Bake for 4 hours at 325º. Scrape seasoning off meat and cut in very thin slices across grain. Serve with barbecue sauce.

Barbecue Sauce
Combine all ingredients and bring to boil. Cook 10 minutes. Serve on brisket.
