2 Pheasants cut up
3 Tbsp Olive Oil
1 c Sweet Onion (Sliced thin)
2 Tbsp Minced Garlic
1 (16oz) Tomato Sauce
1/2 tsp Poultry Seasoning
1/2 tsp Onion Salt
1/2 tsp garlic Salt
1 tsp Oregano
1/2 tsp Celery Seed
1/2 tsp Pepper
1/2 lb Shredded Mozzarella Cheese

Directions:

Cut pheasant into thin strips or bite size pieces. Use a large skillet to brown birds in hot oil, remove and drain on paper towel. Saute onion and garlic in remaining oil until soft, but not brown. Add tomatoes, tomato sauce, salts and spices. Bring to a boil, cover, reduce heat, and simmer for 30 minutes. Place birds and sauce in 2 quart casserole, cover and bake for 30 minutes. remove cover and sprinkle cheese over top. Return to oven, just until cheese melts.
