1 - 1 lb can sliced peaches, drained
2 Tbsp cooking oil
1 - 3 lb cut up chicken or chicken parts
1 cup uncooked rice
1/8 tsp salt
3 Tbsp brown sugar
1/4 cup vinegar
2 onions, sliced

Directions:

Drain peaches, reserving syrup. Add enough water to syrup to make 1 3/4 liquid.

In large frying pan, heat oil. Brown chicken on all sides and drain off fat. Add rice, salt, onions, and liquid to skillet. Bring mixture to boil and reduce heat. Cover and simmer 40 minutes or until chicken is done. Liquid will be absorbed. Be sure to slowly simmer this, not have it bubbling hard.

Mix sugar with vinegar. Pour over chicken and rice. Stir in peaches. Simmer, covered, 5 minutes.
