1 lb pork loin cut into cubes
1 cup margarita mix
1 tsp coriander
1 clove garlic, minced
2 tbs butter, soft
2 tsp lime juice
1/8 tsp sugar
1 tbs minced parsley
1 large green or red pepper cut into chunks
the difficult part: 2 ears of fresh corn, cut into 8 pieces
4 skewers

Combine margarita mix, coriander, and garlic. Place in zip lock bag with the pork cubes. Marinate for at least 30 minutes, longer is great.
Blend butter, lime juice and sugar.
Skewer pork, corn and pepper, alternately. Head for the barbecue, with your butter mixture and skewers. Grill over high heat, for about 8-10 minutes, basting all with butter mixture.
