1 1/4-oz pkg active dry yeast
1/4 c warm water, 110º
3 c flour, divided
3 c sugar, divided
3 c milk, divided

Directions:
In a small bowl, combine yeast and water, and let stand 10 minutes. In a 2 qt non-metal bowl, combine 1 c flour and 1 c sugar, mixing thoroughly. Slowly stir in 1 c milk and yeast/water mixture. Cover loosely and let stand at room temperature until bubbly. Consider this DAY 1 of the 10 DAY CYCLE. On DAYS 2 - 4, stir with a non-metal spoon. On DAY 5, stir in 1 c each flour, sugar and milk. On DAYS 6 - 9, stir only. On DAY 10, stir in 1 c each flour, sugar and milk. Remove 1 or 2 c to make your first bread, and give 3 c of starter to friends (in zip lock bags), along with the instructions. If you do not want to start the process over again, store remaining starter in a non-metal container in the refrigerator, or freeze it in 1 c measures. Frozen starter will take at least 3 hours at room temperature to thaw before using.
