2 tbs plus 4 tsp “pure” olive oil, divided
1 medium green bell pepper, seeded and cut into thin slices
1 medium onion, sliced thin into strips
2 ounces baked ham, cut into thin strips
6 large eggs, divided into two portions
½ cup grated cheddar cheese
Salt and freshly ground pepper

Heat 2 tbs “pure” olive oil in a large skillet over medium-high heat. Add the pepper and onion and cook, stirring occasionally, until tender, about 7 to 10 minutes. Add the ham and cook 1 minute longer. Season with salt and pepper, set aside and keep warm.
For the first omelet, heat 2 tsp of the remaining “pure” olive oil in an 8-inch nonstick skillet over medium heat. Whisk 3 eggs in a medium bowl and season with salt and pepper. Pour eggs in skillet and cook, stirring until slightly firm, about 1 ½ minutes. Sprinkle one side of the omelet with ¼ cup of the cheese and ½ of the vegetable mixture. Transfer to plate folding the omelet in half. Repeat above directions to make second omelet.
