1 1/2 tbls olive oil
1/2 cup minced white onion
1/4 cup chopped zucchini
1/4 cup cut Italian green beans
1/8 cup minced celery
2 tsp minced garlic
2 cups vegetable broth
15 oz red kidney beans, drained
15 oz small white or great northern beans, drained
14 oz can diced tomatoes
1/4 cup julienned or shredded carrot
1 tbls fresh parsley
3/4 tsp salt
1/4 tsp pepper
1/4 tsp basil
1/8 tsp thyme
1 bay leaf
1 1/2 cups hot water
2 cups fresh baby spinih
1/4 cup small shell pasta
1 tbls soy sauce

Directions:
Directions:
Heat olive oil over medium heat in large saucepan. Saute onion, zucchini, green beans, celery and garlic in the oil until onion begins to turn translucent.
Add broth to pot, plus drained beans, tomatoes, carrot, soy sauce, spices, bay leaf and hot water. Bring soup to a boil, then reduce heat and simmer for 20 minutes.
Add spinich leaves and pasta and cook for an additional 20 minutes.
