1 lb bay scallops or sea scallops cut in quarters
1/2 cup sherry wine
1/2 tsp salt
dash of pepper
3 Tbsp butter
3 Tbsp flour
1/2 cup heavy cream
1 oz cheddar cheese, shredded
1/2 cup bread crumbs
1 Tbsp melted butter for the bread crumbs

Preheat oven to 400º

Put the scallops in a saucepan with wine, salt and pepper. Bring to a boil and simmer, covered, for 10 minutes. Drain, reserving 1 cup broth. Melt butter and blend in flour. Add reserved broth and cream. Cook, stirring constantly, until thickened. Stir in the cheese and scallops. Put in a shallow baking dish. Top with buttered bread crumbs and bake in hot oven for 10 minutes.
