5 c. Water
4 c. Frozen Hash Browns
(1) 7.6 oz box Betty Crocker Butter & Herb Mashed Potato mix
1 Stick Butter
4 oz. Cream Cheese
1 c. shredded Monterey Jack cheese
1/2 c. Sour Cream
1/2 tsp. salt
1/2 tsp. plus a dash pepper
2 c. French Fried Onion rings (canned)

Preheat oven to 350º. Bring water to boil, add hash browns & cook for 5 minutes; drain. Prepare the mashed potato mix according to the directions on box. Soften the butter & cream cheese together in microwave. In large bowl, mix together the hash browns, butter & cream cheese, Monterey Jack cheese, sour cream, garlic, salt & pepper. Place in greased 2 qt. casserole dish. Bake for 25-35 minutes, or until golden on top. Sprinkle the onion rings over the casserole and bake for another 5-8 minutes, or until onion are golden brown.
