6 medium chopped onions
6 cloves garlic
6 tablespoons oil
1 pound garlic flavored smoked sausage, cut
10 cups beef stock (bullion ok)
1 can Kidney beans with liquid
12 small new potatoes quartered
¼ cup vinegar
16 ounce bottle catsup
Salt and pepper
3 cups canned tomatoes chopped with liquid

Directions:
Directions:
Sauté onion and garlic till transparent. Add Sausage and brown. Add beef stock and other ingredients. Bring to a boil, stirring often. Reduce heat and simmer 30-45 minutes. Season to taste if necessary. Flavor is best after being refrigerated and reheated. Can be kept in fridge for one week.
