1 egg, slightly beaten
1/4 cup sugar
1/4 cup oil
2 cups flour
1 cup milk
3/4 tsp. salt
3 tsp. baking powder,
handful of chocolate chips or
chopped apple w/ 1/2 tsp. cinnamon, or
1 mashed banana

Directions:
Directions:
Mix egg, sugar and oil. Then add flour, milk, salt, baking powder. Then you can add either chocolate chips, chopped apple or banana. Bake in greased muffin tins at 400º for 15-20 minutes.

My neighbor Linda used to make chocolate chips muffins for my kids when they would spend the night. I had to get the recipe. It is so simple and the kids loved it.
