Cornbread Dressing Recipe

1 pan corn bread
3 cans biscuits, baked
2 large onions
2 bunches celery
2 - 3 sticks butter
32 oz container chicken broth
3 - 5 tbsp poultry seasoning
salt, pepper

Directions:
Crumble cornbread and biscuits into large bowl. Set aside. Melt butter in large sauce pan. Add onion and celery. Saute' until somewhat clear, but not limp. Remove from heat and let cool slightly. Add vegetables to bread mixture. Mix well. Sprinkle 3 tbsp poultry seasoning over mixture. Pour 1-2 cups of broth over this. Mix well. Taste and add seasonings as needed. Put mixture in 13x9 baking dish. Pour a small amount of broth over dressing. This is very subjective - if you like very moist dressing, add more broth. If you prefer a dryer dressing, add less. Bake at 350º for 30 minutes or so, until hot through and well-browned.

Note: I have never had a written recipe for this, so the amounts are my best guesses. It is meant to be a flexible recipe. I use equal amounts of cornbread and biscuits. You can increase either to suit your taste. If you like more vegetables in your dressing, add more vegetables. The key is tasting the final mixture and adding seasoning or broth as needed. Always start with less than you think you need - you can always add more, but it's really difficult to take stuff out!
