2 to 3 lbs. pork tenderloin
4 slices thick bacon

Sauce
1/3 cup Dijon Mustard
3 Tbsp. Spicy Brown or Whole Grain Mustard
4 Tbsp. Honey
2 cloves Garlic (minced)
Salt (pinch) optional
Pepper (1/4 tsp.) optional

Directions:
Directions:
Mix the above ingredients together and rub over roast. Place the roast on a rack in pan, lay bacon across roast so that the bacon ends will fall in the pan. Bake 45 to 50 minutes per pound. Use meat thermometer to make sure roast is done (165).

If bacon starts to burn, cover with foil until meat is done.

Sauce will be left over, store in a container and refrigerate, can use later on chops or chicken breasts.
