1/4 c. warm water
2 1/2 tsp. yeast or 1 packet
1 T. sugar

1 3/4-2 c. flour

Directions:
Directions:
Stir together warm water, yeast and sugar. Set aside for about 10 min to rise.

In mixer, combine hot water, salt, sugar, and butter. Mix. Once yeast has risen add 2 1/2 c. flour, 1 egg and yeast. Mix all together (using mixing paddle arm)

Add 1 3/4 c. flour and mix until ball forms. If dough is still too soft, add more flour until the dough feels like squishy play-dough. Take paddle arm off and replace with hook arm. Turn mixer on to "2" setting for Kitchen Aid mixers. Let machine knead dough for 7 minutes. OR knead dough by hand for 5-6 minutes.

Spray bowl with cooking spray and place dough in it. Cover and let rise for a couple of hours. Punch down and let rest for 10 minutes. Spray cookie sheet with cooking spray.

Divide dough into 2 balls. Divide each ball into three 14 inch ropes. Pinch ropes together and braid. Place on cookie sheet. Cover and let rise for 1 hour.

Whisk 1 egg and 1 T. until well combined. Brush over loaves.

Heat oven to 350º. Bake for 14-18 minutes or until golden brown.
