2 chicken breasts
2 eggs, beaten, and with a little salt
1/2 c. flour, salted and peppered
1 1/2 - 2 c. bread crumbs, approx. (combination of Italian seasoned bread crumbs and Panko crumbs is best)
2 TB butter, melted
2 cloves garlic
2-3 lemons

Cut chicken into slices. Use the back side of a small cast iron skillet to flatten each piece to about twice its starting size, by pounding on it on your cutting board (this is good after a stressful day!). Dip each piece in flour mixture first, then coat it in the beaten egg, and finally in the bread crumbs.
Press it into the crumbs well, so that you get a good thick coating. Arrange chicken in an oiled baking dish. You might need two pans so that each piece has enough room. Bake at 350º for about 15-20 minutes. Halfway through baking, brush each piece with the garlic butter, and flip each piece.

Cut at least two lemons into wedges, and have everyone squeeze lots of lemon onto their chicken at the table. Serve with a side of cooked quinoa and a small dressed salad and imagine you're eating the "Menu Familiar" at a restaurant in La Paz.
