For sauce:
1&1/2 cups each: dark brown sugar and ketchup
1/3 to 1/2 cup red wine vinegar
1/4 cup water
4 tsp. dry mustard
1 Tbsp. each: garlic powder and Worcestershire sauce
2 tsp. each: paprika and pepper
1/4 tsp. kosher salt
For rub:
5 Tbsp. light brown sugar
1&1/2 tsp each; chili powder and crushed red pepper
1 tsp. garlic powder
1/2 tsp. each: kosher salt and onion powder
1/4 tsp. each: black pepper and cayenne pepper
2 racks baby back ribs

For sauce: in large mixing bowl, beat sugar , ketchup, vinegar, and water till blended. Beat in mustard, 1 Tbsp garlic powder, Worchestershire, paprika, and salt and pepper. Cover and chill overnight.
For Rub:
In small bowl, combine sugar, chili powder, crushed red pepper, garlic powder, salt, onion powder, and black and cayenne peppers. Reserve and set aside 2 Tbsp. of the rub. Rub the meat with the rub mixture and seal in plastic self sealing bag. Refrigerate 12-24 hours.To cook: wrap each rack with heavy duty foil. Arrange charcoal around a drip pan. Heat should be medium-hot coals. Place ribs on grill rack over drip pan. Cover and grill for 1 hour. Carefully open foil and brush 1/2 cup sauce to each rack of ribs; reseal foil and grill 45 minutes more or till tender. Carefully unwrap ribs and move directly over coals; brush with additional sauce and grill 15 minutes more or till lightly browned, turning once. Transfer ribs to platter, brush with sauce and sprinkle with the 2 Tbsp. reserved rub mixture.
