1/4 c. vegetable oil.
2 lb. boneless pork, cut into 2" cubes.
2 c. chopped onions.
1/4 c. lime juice.
2 packets of Goya adobo.
1/2 small hot pepper (your choice)
1/2 tsp. black pepper, ground.
1 c. orange juice.
1/4 c. chopped shallots or green onions.
2 green peppers, cut into 2" square sections.
1/4 c. water.
1/4 tsp. dry thyme.
salt to taste.
1/2 c. red wine.
1/2 tsp. ground coriander seed.

Directions:

In skillet heat the vegetable oil in medium heat.
Add pork cubes and cook until evenly brown.
Stir in the onions, shallots, orange juice, lime juice, water, thyme, salt, pepper, green pepper and hot pepper. Bring to boil, cover the pan, and simmer for 30 minutes. Then uncover the pan, raise heat and stir frequently to prevent the meat from sticking and burning. Do this for about 10 minutes until the sauce thickens a bit.
Serve over rice or with boiled potatoes.
