3 Eggs
1 cup Oil
1 ¾ cup Sugar
1 Tsp Vanilla
2 cup peeled grated Zucchini
3 cup Flour
1 Tsp Salt
1 Tsp Baking Soda
1 Tsp Baking Powder
1 Tsp Cinnamon
1 cup Chopped Nuts

Directions:

Beat eggs till light and fluffy
Add oil, sugar, zucchini and vanilla – mix lightly but well
Add dry sifted ingredients and nuts – mix until blended
Pour into three greased foil loaf pans half filled
Bake at 350º oven for 45 minutes to 1 hour

Also instead of nuts, add ½ cup of wheat germ and ½ cup of currants may be used
