¼ cup firmly packed Brown Sugar
2 tbsp. plus 2 tsp. Margarine
1 Egg, beaten
¼ tsp. each Vanilla Extract & Ground Cinnamon
Dash of: Ground Cloves, Ginger, Nutmeg, Allspice & Salt
¾ lb Sweet Potatoes, Yams cooked, peeled and mashed
¼ cup Evaporated Skim Milk
1 - 9” Graham Cracker Pie Crust

Topping
½ cup Cool Whip
½ tsp Maple Extract

Directions:
Directions:
Preheat oven to 350º.
In a small mixing bowl, using back of spoon, combine sugar and margarine.
Add egg, vanilla, cinnamon, cloves, ginger, nutmeg, allspice, and salt.
Using an electric mixer at low speed, beat until combined.
Add potatoes and mil, beat at medium speed until smooth.
Pour filling into pie crust and bake firm for 50 minutes to 1 hour.
Cool pie to room temperature or chill until ready to serve.
When ready to serve, in a small bowl combine Cool Whip and maple extract.


Serve each portion of pie with 1/8 of the maple flavored topping.
