2 lbs. white mushrooms
2-4 cloves garlic
A bottle of sweet sherry (Harvey's Bristol Cream is best)
1/4 to 1/2 c. olive oil

Directions:
Directions:
Wash mushrooms and dry completely.
Chop 2-3 cloves garlic.
Gently fry the chopped garlic until it is light brown.
Add the mushrooms and stir frequently as they absorb the olive oil.
At this point, begin to add the sherry a little at a time and watch as the mushrooms absorb the sherry. Keep adding sherry until the mushrooms can't absorb any more.

Remove the frying pan from the stove.

Let the dish cool at room temperature, add a little more Sherry and refrigerate.

Remove from the refrigerator about 1/2 hour before serving.
