3 tbsp. butter
4 lbs. sweet potatoes, peeled and cut crosswise into 1/4 inch thick slices
3/4 cup grated Parmesan cheese
1 cup brown sugar
2 cups heavy whipping cream
1 tsp. salt
1/2 tsp. freshly ground black pepper
1/4 tsp. (or less) cayenne

MAKES 8 TO 10 SERVINGS
1. Preheat oven to 400 degrees. Butter a 9 x 13 baking dish with 1 tbsp. butter. Arrange a third of the sweet potatoes, overlapping slightly, in the dish. Sprinkle with 1/4 cup cheese. Repeat with two more layers of sweet potatoes and cheese.

2. In a bowl, combine cream, salt, brown sugar, pepper and cayenne. Pour over potatoes. Dot with the remaining 2 tbsp. butter. Cover dish with foil and bake 20 minutes. Remove foil and continue baking until sweet potatoes are tender and top is browned, 20 to 25 minutes.

Personal Notes:
Both orange sweet potatoes,
(such as the Garnet and Jewel varieties and probably Yams, as well)
and white sweet potatoes work well in this dish,
but the vibrant orange ones bring a splash of color to the table.
